Sunrise Asian Salad Recipe
Ingredients: 1/2 cup Adzuki Beans 1/2 cup Black Beans 1/2 cup Black-Eyed Peas 1/2 cup Brown Rice 1/2 cup Wild Rice 1/2 medium Red Onion, sliced thinly 1/3 cup fresh Lemon Juice 1 tbs. BraggTM or 1 tsp. Real SaltTM 1 tsp. Curry Powder 1 clove Fresh Garlic, minced 1 tsp. Zip or 2 tsp. Black Pepper 1 inch cube of fresh Ginger, grated 2/3 cup Olive Oil 1 Carrot, julienned (use mandoline) 1/2 cup Snow Peas, trimmed and sliced 1 cup Bean Sprouts or 1 cup Sprouts, any kind (e.g. Pro-Vita mix sprouts from Life Sprouts)
Place beans and rice into a large bowl.
In small food processor, place lemon juice, Bragg Aminos, garlic, curry powder, ginger and pepper. Gradually add olive oil and process until well emulsified.
Pour dressing over bean/rice mixture. Add remaining vegetables. Toss well and then chill for 2 hours before serving. *Source: "Back to the House of Health" by Shelley Redford Young, L.M.T.
