Baby Carriage Cake Recipe and Design Ideas

This is a very easy cake to make! It just takes time and patience. I used a large round 14" x 2" cake pan for the buggy, and a small 6" x 2" for the wheels.
I made a standard buttercream frosting recipe, and to help out with time, the baby buggy cake itself is just a boxed cake mix. This cake took four boxes of cake mix. The large pan holds 2 and a half. The smaller pans use the remaining half, plus a quarter of the remaining batter.
I want my cakes to rise just above the rim, so the tops can be sliced off at the full two inch depth of the pan. I used two frosting tips, one for the large star pattern, Wilton 1M, used all over the cake and handle, and the other round tip, Wilton 12, to define the wheels and spokes. Use their decorating bags and coupling for ease.
Bake your cakes and allow them to cool completely. Make frosting in colors of choice. I used 4. Light blue, darker blue, white, and yellow. I made the Wilton standard buttercream recipe, and made 4 batches of it (two full batches being your main color).
Cut out 1/4 of your buggy on the top to make the shape. Round it, or curve your cut a bit for the hood. The piece you cut out will be used to cut your handle for the buggy. I used the bottom curve for the longest part of the handle, and cut two smaller pieces to make it curve down a little. Cut out two small half moons out of the bottom of the buggy to fit the wheels in. The cut needs to be about 3 inches at the deepest point.
Using your main color of frosting, pipe your stars along the bottom of the buggy, between the wheels, first, before you slide the wheels in. "Glue" in with frosting. Attach the handle with frosting "glue" to the buggy. Using a butter knife, score the shape of the stripe across buggy. This gives you a guideline to use when piping and filling in.
Frost the entire baby carriage cake with a smooth, thin, layer of the color frosting you will be using for each area. This ensures your cake color will not show through the stars. Frost the wheels smooth, and white, in a medium layer. You can pipe stars around the sides of the wheel if you'd like. Using the round tip, start at the middle of each wheel, and in a smooth, consistent line, pipe to 1/2 inch of outer wheel. This allows room for the wide, continuous circle you will pipe next.
Of your contrasting color, or stripe color as I did, pipe a large star in the center of the wheel, where the spokes meet. Pipe stars all over the rest of the cake, careful to put them close together, and on the outside of the cake as well. Don't forget the area between the hood and handle!
I did not fill this baby buggy birthday cake because of the amount of frosting being used on top of it. But you may if you wish.
