Beach Cake

I made this beach cake a couple of years ago for my daughter's luau party. It really fits the theme!

I made the cake with a boxed caramel cake mix (any type will do, but I figured the caramel color was "beachy"). Use a 9x13 rectangular cake pan, and be sure to grease and flour generously so the cake comes out of the pan easily. Mix batter, pour into pan and bake the cake according to the directions on the box. Once cooled, turn cake upside down onto a covered tray or cake board.

I used a tub of vanilla frosting I bought at the store and colored with blue food coloring. Add food coloring one drop at a time and mix well until it is the shade you want. Frost the entire luau birthday cake with blue frosting. Press brown sugar onto approximately half of the cake, creating a "beach" and a natural (not straight) shoreline. You can go back with extra icing and make waves by swirling more icing on the ocean part of the cake.

I bought several plastic decorations from a local cake decorating supply store: palm trees, Tiki torches, a hula girl, crab, and dolphins. I found starfish and seahorse sugar decorations. I also bought some chocolate candy coated "rocks". I started with placing the palm tree on the "beach". I had to pile a few "rocks" at the base to keep it stable, but it also covered up the plastic base, which made it look better.

Then I placed a plastic cup tea light candle and piled "rocks" around it to partially cover the cup and create a "bonfire". Then I placed the Tiki torches, hula girl, and a drink umbrella to look like a beach umbrella. I placed the crab and sugar starfish along the "shoreline". Finally I placed the seahorses and the two dolphins to look like they were jumping out of the ocean.
