Hello Kitty Cake Recipe and Design Ideas

Hello Kitty Cake



I made this cake for my friend's little girl. She wanted a Hello Kitty cake and I couldn't find the cake pan for one so I decided to do my own thing.

I baked a half sheet cake (11x15x2 pan), used an oval pan to make the Kitty, a square pan for ears. (You'll need approx. 3 boxes of your favorite brand cake mix. I use the ones with the pudding in the mix for a more moist cake.) The square one doesn't have to be thick as you will only be using 2 of the corners for the ears.

Make 2 double batches of buttercream frosting. You will probably have some left over but it's better to be safe than sorry. For one 2lb. batch I use: 2 lb. bag of powered sugar, 2 sticks butter, 1 cup solid vegetable shortening, 2 tsp flavoring (I use vanilla), 4 tbsp water, 2 tbsp of meringue powder (optional).

Tint about 2-3 cups of the frosting pink. This will be used for the writing, bow, and borders. I used some black writing gel for the whiskers and the eyes because it takes a lot of color to get it to be black and with this cake only a little is needed. I used a yellow "Mike & Ike" candy for the nose. I used "Hello Kitty" cupcake picks for added decorations.

Use some of the white frosting to frost the sheet cake, smooth that all over the top and sides. Take the oval cake (unfrosted) and put it in the corner of the sheet cake (at an angle). Make sure to leave enough room for the ears and border. Take the square cake and cut off 2 of the corners - they will become the ears. Use some frosting to attach ears to top of the oval (head).

Use decorating bag filled with some white frosting and a star tip to decorate the head and the ears. Using the black writing gel make the whiskers and eyes. Fill a decorating bag with some pink frosting and make a bow near the ear. The bow was given the raised look by adding the pink stars on top of the white stars.

I added a small pink shell border around the cake just to add to the decoration. It also makes the cake look more uniformed. The Hello Kitty cake could also be put on its own cake board, sit on top of the 1/2 sheet cake with the small border. So this portion of the cake can be cut off for the birthday girl to have all to herself.

I did the writing and the shell border in pink so that they would stand out. The cake was sprinkled with white/clear decorating sparkles for an added touch. This helps the Hello Kitty birthday cake to sparkle when the light hits it.

***NOTE***
On the sides of the cake I used a potato crinkler to make wavy lines instead of smooth sides. Just a little added touch to be different!!!!
