Nutty Vegetarian Meat Loaf Recipe

Ingredients:
1 cup Almonds, raw
2/3 cup Sunflower Seeds, raw
1/2 cup Brazil Nuts, raw
1/4 cup Flax Seed, ground
1/2 cup Water
2 small Onions, diced
1/2 cup Parsley, fresh
1/2 tsp. Real SaltTM
1/2 tsp. Sweet Basil
1/2 tsp. Sage
1/3 tsp. Thyme

Sauce:
1/2 cup Almonds, ground
2 cups Water
1 tsp. Seasoning, your choice
2 tbs. Arrowroot Flour
Dash of Cayenne Pepper
2 tbs. Olive Oil
1/4 tsp. Real SaltTM

Preheat oven at 350°F. Grind nuts and seeds in a processor, blender or grinder. Combine remaining dry ingredients, mix well. Add the water and mix again. Place in a well-oiled loaf pan and bake for 25 minutes at 350°F.

Sauce:
Combine all (sauce) ingredients, bring to a low boil and stir constantly. Turn heat down and simmer on low heat until thick. Pour over top of nut loaf.

Serve with tossed salad or steamed vegetables. As an option to the listed spices, you can use Spice Hunter's Cowboy Barbecue Rub and 3 sun-dried tomatoes.
