Healthy Spinach Quiche Recipe

Pastry:
4 cups Whole Wheat Flour
6 tbs. Vegetable Oil
Pinch of Real SaltTM
A little cold Water

Filling:
2 Onions (diced)
3/4 cup Vegetable Oil
2 tbs. Parsley (chopped)
2 tbs. Dill Weed
2 cups Spinach (chopped & cooked)
2 (10 oz.) packets frozen Spinach
Real SaltTM to taste
2 cups Tofu
1/4 cup Soy Milk (if necessary)

Pastry:
Combine the ingredients, and knead the dough into a cohesive ball. Roll out the pastry on a floured board and press it into a greased pie dish.

Filling:
Sauté the onions in oil until they are transparent. Add the dill weed, parsley, spinach (defrosted) and salt, and mix them in well.

Blend the tofu in a processor with the soy milk if it is difficult to blend on its own. (You might also put the parsley into the blender to chop it up more easily.)

Pour this over the vegetable mixture and mix it thoroughly. Place the filling in the pastry case and bake it at 375°F for about 30 minutes.
